Ingredients
2 lbs. shrimp cleaned, washed and drained
4 tbs. olive oil
4 large fresh tomatoes, pureed
1 bunch parsley cut, washed and drained
salt and pepper to taste
Execution
Place the oil and tomato puree in a pot and cook until reduced to ½
mass. Add the parsley, shrimp, salt and pepper and cook for approximately
7 minutes. Remove and serve.
