Fabio Pagnozzi Returns to X&O European
Trattoria
as Executive Chef
Native
Neapolitan brings experience and flavor to Quincy restaurant
Quincy,
MA (January 21, 2002) - Mary and Manos Gregoriades, owners of the
X&O European Trattoria in Quincy, are pleased to announce that
Fabio Pagnozzi has recently rejoined the restaurant as its Executive
Chef. Pagnozzi manages all functions of the kitchen for X&O,
including the staff and menus.
Pagnozzi
has more than 15 years' experience in the restaurant industry, having
worked as Executive Chef at Tiffany's Restaurant in Boulder City,
Nevada, and Assistant Executive Chef at La Scala in the MGM Hotel
in Las Vegas. He began working at X&O in 1999.
Fabio
creates dishes where the delight is in the details. When cooking,
he favors extra virgin olive oil-based foods and a variety of fresh
herbs. He places portions on equal footing with presentation, making
your entrée not only good to look at, but satisfying for
healthy appetites. Pagnozzi's lasagna is a homemade recipe inherited
from his family, while his signature marinara is specially concocted
using olive oil infused with herbs and garlic. A traditionalist
with a modern twist, Fabio loves to put fresh spins on more predictable
fare, often fusing authentic Greek and Italian cuisine to create
fresh, hybrid tastes. He is able to blend foods that the less adventurous
would think incompatible, such as feta cheese and shrimp, while
still maintaining the marvelous balance that allows the diner to
experience each ingredient.
Born
in Naples, Italy, Pagnozzi took his first steps into the world of
food preparation as a boy, when he would help with family meals
by making pasta and preserving southern Italian vegetables such
as eggplant, zucchini and tomatoes for the winter. He was formally
trained at the Marina di Carrara Instituto culinary school in the
Tuscany region of central Italy.
"Fabio's
expertise and creativity make him an ideal Executive Chef for X&O,"
said Manos Gregoriades. "Fabio's experience both in the United
States and Europe has prepared him well for X&O's distinctive
blend of Greek and Italian cuisine," added Mary Gregoriades.
Pagnozzi
currently resides in Whitman, Mass., with his wife, Jeanne,
and their daughters, Isabella, 4 and Antonia, 2.
