The
Gregoriades Family
A
passion for fine food has run through the Gregoriades family tree
for many generations. The family's love for cooking and the highest
levels of hospitality are directly linked back to the villages of
northern Greece, where their Yia Yia (Greek for "grandmother")
would create wonderful meals using fresh ingredients plucked from
nature. Meals were a time when everyone could come together to enjoy
each other's company and played an important role in defining what
it meant to be a family.
Many
miles and many years have passed since their ancestors created their
first masterpieces in the kitchen, but when the Gregoriades moved
to the United States and settled in Massachusetts in 1969, they
brought their family recipes and this sense of tradition with them.
In fact, many of the recipes featured on X&O's menus today are
actual recipes from Yia Yia herself. This is why the Gregoriades
are so involved in ensuring that every patron's visit is an individualized
experience, consistent with their ancient family traditions. This
experience has evolved over the years. Today, the Gregoriades family
recipe for an X&O experience includes quality European cuisine,
meticulous attention to detail, tireless commitment to service,
an inviting atmosphere and a chance to reconnect with those who

President/General Manager
Manos is responsible for originating the concept of X&O European
Trattoria. He is the man who oversees all daily operations and spearheads
all future planning and development goals for the restaurant.
Before
founding X&O Trattoria with his mother, Mary, Manos worked in
management for more than seven years with such companies as Mobil
and Exxon. He earned a B.A. in Public Administration from Stonehill
College in 1991.
Manos,
a resident of Canton, Mass., enjoys traveling to Europe and domestically.
These experiences have enhanced and influenced his conceptual direction
for X&O. return

Mary
Gregoriades
Director of Operations
In
addition to co-founding X&O European Trattoria with her son,
Manos, Mary creates a unique style of authentic Greek dishes. She
also is responsible for the observation, planning and implementation
of its various organizational systems. Mary maintains quality product
assurance and evaluation procedures.
Mary's
additional duties include planning functions, monitoring environmental
and equipment safety, supervision and training of the staff.
Mary
has 27 years experience working for the Commonwealth of Massachusetts,
where she served as Assistant Director for DMR state services. While
living in Greece, she spent seven years as the Director of Nursing
Services at various health care facilities, where she won numerous
awards and distinctions. Mary currently resides in Canton with her
husband, Christos, a surgeon. return

Krysla
Gregoriades Pedone
Director of Information Management and Systems
Krysla
is the Director of Information Management and Systems at X&O,
handling a variety of administrative and organizational duties.
Previously, her experience includes positions in management, sales
and marketing at MetLife and a private law practice in Boston.
Krysla
received a JD from Boston University School of Law in 1991. She
currently resides in Milton with her husband John and two sons,
Christos and Loukas. return
